SSDIS01007 – Basic Skills for the Food Industry Skill Set

Description

This course will provide participants with basic skills in food preparation and cookery skills to prepare food and menu items. It may also provide a pathway to work in kitchen operations in organisations such as restaurants, hotels, catering operations, clubs, pubs, cafés, and coffee shops; and institutions such as aged care facilities, hospitals, prisons, and schools.

This course provides skills and knowledge in hygiene, basic cookery and kitchen organisation. You will develop your abilities in time management, multi-tasking and communication in a fast-paced environment as well as developing an understanding in the importance of hygiene awareness.

The following equipment and uniform will be required for this course:
• Chef’s knife and paring knife
• Non slip shoes suitable for kitchen (no open toes) preferably black
• White or black polo top or chefs jacket
• Black pants
• White apron
• White skull cap (preferable) – TAFE SA will supply a hair net
• 2 tea towels

As part of the registration process you will need to complete a Participant Agreement Form - you can download this form from the Files & Resources tab below.

For applicants that are not eligible for Fee Free where an organisation wishes to pay the full fees for this course, please contact the Short Course team via email on shortcourses@tafesa.edu.au to organise a Third Party Payment invoice.

  • Completion of the Participant Agreement Form - you are required to upload a completed form at the time of enrolment. You can download a copy of the form under the Files & Resources tab below.
  • Use hygienic practices for food safety (SITXFSA005)

    Participate in safe food handling practices (SITXFSA006)

    Participate in safe work practices (SITXWHS005)

    Use food preparation equipment (SITHCCC023)

    Prepare dishes using basic methods of cookery (SITHCCC027)

  • The theory component of this skill set is delivered fully online through our LEARN platform. This means you can complete the learning in your own time.
    You will have access to all required learning materials, activities, and assessments online. While the study is self-paced, our lecturers are available to support you throughout your learning. They will provide guidance, answer questions, and help you stay on track to successfully complete the course.

Short Course Delivery Locations Some short courses can provide accreditation for industry-specific registration, while others merely provide skills and knowledge in the subject area. Concession prices are available for some courses.
