Take your pastry skills to the next level in this hands-on 3-hour class focused on modern Viennoiserie. Using classic laminated croissant dough, participants will explore creative twists on the traditional croissant, transforming it into contemporary shapes and indulgent finished products.
Students will learn how to create a variety of modern styles including Dubai chocolate scrolls, sculpted shapes such as cubes and spheres, and how to enhance their pastries with creams, fillings, glazes, and garnishes for striking presentation and flavour.
Previous experience making traditional croissants is helpful but not required. This class is designed to suit keen home bakers and professionals looking to expand their repertoire, build confidence working with laminated dough, and create visually impressive pastries perfect for sharing, gifting, or elevating everyday baking.
