Beer Flavour Training


This short course, conducted across four evening sessions, is aimed at those seeking a detailed and comprehensive understanding of beer styles, flavours, faults and evaluation. The course is delivered by Stephen Nelsen (B.App.Sc. Chem Tech., Dip.Brew. IBD.), experienced and qualified brewing consultant, and professional beer educator.

Throughout the 4-week course, participants will gain theoretical flavour knowledge and vocabulary, as well as exposure to beers of diverse styles; good, bad and spiked with specific compounds for the benefit of training their own palates.

The course will include 4 topics, one covered each week:
1. Flavour knowledge – your senses, beer ingredients and interactions;
2. Beer styles – categories, varieties and specialties from around the world;
3. Beer faults – what you should not perceive in beer, and why;
4. Beer judging – how to apply your new skills for wider benefit.

Each topic will be expanded and explained in technical detail, providing an opportunity to broaden beer knowledge in general, whether to enhance the enjoyment of discerning beer drinking or to provide invaluable experience to those seeking further industry qualifications, such as the Beer Judge Certification Program (BJCP). This qualification will be highly regarded in the burgeoning beer sector of the hospitality industry and will be invaluable to brewers on all scales.

Each evening session students will receive written handouts and forms for their own use. There will be beer samples presented in a technical tasting panel environment.

This course is not examined academically, however there may be a small comprehension assessment and your feedback is sought.

Participants should note that the consumption of alcohol is involved and that travel from the venue should be planned accordingly.

Dress code: neat casual.
