Award-winning chef Amity Lobb is among a talented group sharing their expertise in cooking workshops for TAFE SA’s L Plates series this May.
The workshops are set to inspire home cooks and introduce them to new flavours, ingredients and techniques with expert tuition from TAFE SA lecturers and industry chefs.
Amity, a TAFE SA graduate and junior sous chef at La Louisiane, will be sharing the secrets to a French classic, teaching people how to make the restaurant’s best-selling twice-baked Gruyère soufflé.
“Souffles can seem complicated, but you really just need to know how,” Amity says.
“I’m mindful of cost-of-living pressures and this is a good dish to learn so you can create a fancy dining experience at home.”
Amity’s menu will feature the gruyere souffle served with a red wine gastrique and an orange and fennel salad, which she says is a good combination for home entertainers to have in their repertoire.
Amity has just returned from the Young Chefs Grand Prix (pictured) in Singapore where her team achieved the only gold medal of the competition and overall highest score for their entrée - a ‘surf and turf’ chicken and seafood croquette.
The competition included a relay race to source ingredients from exhibitors at Food and Hospitality Asia 2026 before the cooking tasks began.
Amity says competitions challenge her to use different ingredients and techniques and have helped fast-track her skills.
In 2025 she won a silver medal at the WorldSkills National Championships. She was part of the team which won silver and bronze medals at the IKA Culinary Olympics in Germany in 2024, and she was the South Australian regional winner of the Nestle Golden Chef’s Hat 2023.
Amity recalls being a student and helping to set up for previous L Plates programs and is looking forward to returning to Regency International Centre as a guest chef. She will be joined by Terry Intarakhamhaeng from Soi 38, Ettore Bertonati from Back to Nap, and TAFE SA’s Paul Beech (Bread), Jon McKeigue (Patisserie), Paul Herbig (Petite Gateau) and Frank Hero (Tapas).
