Chocolatier Marcus Booth-Remmers will be sharing techniques, tips and knowledge built up over 15 years when he hosts an L Plates cooking workshop, as part of Tasting Australia, on Saturday 1 May.

“The Chocoholics Anonymous workshop is for chocolate enthusiasts, complete novices and those with some experience, and they can ask me any questions,” Marcus says.

Marcus, the owner of Red Cacao at Stirling, says he discovered an interest in chocolate while studying a Certificate IV in Patisserie at TAFE SA.

After graduating in 2006, he worked as a pastry chef at several Adelaide venues, including Magill Estate, before moving overseas to learn more about chocolate making.

He spent five years in Europe, working in Germany, France and Belgium, which “opened up a completely new culture and way of thinking”.

“It’s not just about chocolate but the way of thinking. It’s less about sweetness and more about the flavours,” he says.

When he returned to SA, Marcus decided to open his own business, so he could pursue his passion for making European-style artisan chocolate.

“My former lecturer at TAFE SA, Martin Schnider, gave me the best bit of business advice and that was to include coffee,” he says.

Marcus established Red Cacao Chocolatier and Cafe in 2013 and it quickly built a reputation for its coffee and chocolate pairings, with Raspberry Ganache and Baileys Truffle among the most popular.

In 2016, he renovated the Stirling café to extend the seating area and set up a separate facility at Mt Barker to make the chocolates and patisserie items they serve.

After the challenges of last year’s COVID-19 restrictions, Marcus says business is booming again and he’s looking forward to sharing his passion for chocolate at the L Plates workshop, which will be held at TAFE SA’s Regency International Centre.

The workshop will include tempering and moulding techniques using common kitchen equipment and participants will make truffles and ganache.

“I want participants to be able to reproduce what we do at home. You want to be able to take something practical away from these sessions,” he says.
