Regency Meat Studies

The Meat Studies Program at TAFE SA assists students in gaining the skills and knowledge they need to perform a variety of tasks within the meat processing industry. 

On completion, students have gained an overview of the meat industry and achieve credits toward the apprenticeship course.

Skills gained include:

  • Sharpening knives
  • Applying hygiene and sanitation practices
  • Identifying species and meat cuts
  • Trimming meat for further processing
  • Storing meat products
  • Preparing minced meat and minced meat products 
  • Selecting, weighing and packaging meat for sale.

Certificate course’s can provide training from pre-apprenticeship level to Diploma in the meat retail industry.
Higher level courses assist students in developing more advanced skills. Students gain skills in OH&S risk control processes; facilitating hygiene and sanitation performances; managing their own work performance; and facilitating quality assurance process. 

Quality training is designed to offer hands-on experience and sound theoretical knowledge to adequate prepares graduates for work in the meat industry.

    Employment

    A course in meat processing provides pre-apprenticeship-level training in the meat retail industry and graduates gain credits toward the apprenticeship course for units completed. Most of the butchers employed in South Australia work in retail outlets. 

    They are trained in selecting, cutting, trimming, preparing and then displaying meat for sale. Retail butchers order their carcasses from a meat wholesaler or abattoir, where butchers are also employed.
