Located at the Regency campus, the internationally recognised Regency International Centre is a Lead Centre for Hospitality, Food and Recreation with studies available in commercial cookery, food and beverage service, events and hospitality management, meat retail, bakery and pastry cooking, patisserie, community recreation, fitness, outdoor recreation and sports coaching. It also operates in conjunction with two well-know international organisations, the International College of Hotel Management and Le Cordon Bleu.

Programs including mechanical engineering, electrical engineering, electronics, refrigeration and air-conditioning, plumbing, metal fabrication, and vocational preparation including English as a second language, and community services programs for international students are also available at this campus. Also located at the Regency campus is the Renewable Energy Centre of Excellence which showcases a range of skills and technologies for the renewable, sustainable and demand-side energy management industry.

TAFE SA trained chef wins culinary battle

GC winners 007An entrée of trout tortellini with pickled cucumber, braised beef short ribs for main and a decadent dessert of caramelised white chocolate mousse will take two young Adelaide chefs to the national final of the 2015 Nestlé Golden Chef’s Hat Award.

TAFE SA trained Cameron Tabe (aged 20), and Jason Gliese (aged 21), both apprentice chefs at Playford Hotel, beat 42 of the region’s up-and-coming young chefs in the prestigious culinary competition, achieving a gold medal for their efforts.

The three-course culinary challenge, hosted at TAFE SA Regency International Centre’s commercial kitchens, had them creating a sumptuous three-course meal to impress the judging panel, (made up of internationally recognised World Association of Chefs Societies (WACS) judges, Nestlé Professional chefs and members of the Australian Culinary Federation).

Australian Culinary Federation Competition Director, Deb Foreman, said, "With record entries into the Award this year, the competition was tougher than ever. Jason and Cameron were up against some talented chefs but they kept their focus, delivering some exceptional dishes."

Jason and Cameron have secured themselves an all-expense paid trip to Sydney, during Fine Food Week in September, where they will represent South Australia.

Celebrating 50 years in 2015, Australia’s longest running culinary competition for young chefs will award the national winning team what promises to be a career kick-starting trip to South Africa, for a once in a lifetime food safari experience.

Educational Manager Belinda McPherson said “TAFE SA has been a proud supporter of the Nestlé Gold Chef’s Hat competition for the past 12 years, providing in-kind support to the value of $35,000 through the use of Regency International Centre’s world class facilities and awarding the winners, Jason and Cameron, TAFE SA scholarships for the completion of their Certificate IV in Commercial Cookery. This will allow them access to further study to continue their learning journey.”

The Nestlé GOLDEN CHEF’S HAT AWARD is dedicated to helping junior and apprentice chefs develop their cooking skills and broaden their culinary horizons.
Taking part in the Nestlé GOLDEN CHEF’S HAT AWARD offers apprentice and junior chefs the opportunity to pit themselves against their peers and benchmark their cooking skills.

With the first event held in 1965, the Nestlé GOLDEN CHEF’S HAT AWARD is the longest running sponsorship for Nestlé Professional and is run annually in partnership with the Australian Culinary Federation with support from event partners Emerald Valley, Bidvest Australia and Game Farm.
